Plant-Based Salad Bowl
Salad bowls always make delicious and healthy lunches! When you’re on the hunt for a plant-based diet lunch, you can’t go far wrong with this easy recipe. While we will give you the basics here, keep in mind that you can customize the dish as much as you please. Here’s what you need to know to get started.
1 cup spinach
1 cup quinoa
½ cup cherry tomatoes
½ cup bell peppers
½ cup red onions
½ cup butter beans
¼ cup chopped walnuts
1 tsp balsamic vinegar
1 tsp olive oil
Wash the spinach and set aside. Peel and dice the onions. Chop the bell pepper into thin slices and dice the tomatoes. Wash and drain the butter beans.
Put some water in a pot and bring it to the boil. Pour the quinoa into the pot and boil for 18-20 minutes. Drain and set aside.
In a small bowl, mix together balsamic vinegar and olive oil to make a dressing.
In a medium bowl, start by layering in the spinach. Next, add the quinoa, peppers, onions, beans, and walnuts.
Drizzle over the balsamic vinegar dressing and then serve.
Pro tip: Want to add some extra crunch to your salad? Why not add some croutons into the mix at the last minute? Delicious.
Spiced Vegetable Wrap
If you’re in a rush, a spiced vegetable wrap is the perfect lunch. Put simply, you can roll this one up and then go. If you’re in the mood for something light, delicious, and slightly spicy, you’ve come to the right place. Here’s what you need to know.
1 tortilla wrap
1 cup bell peppers
½ cup olives
½ cup sun-dried tomatoes
½ cup kale
2 tsp hummus
½ tsp chili flakes
Wash the kale and set aside. Wash and chop the olives, sun-dried tomatoes, and bell peppers.
Place the tortilla on a plate. Use a spoon to spread hummus onto the wrap as a base.
Next, add the sliced olives, sun-dried tomatoes, bell peppers, and kale.
Sprinkle the chili flakes on top of your ingredients to give your warp an extra kick.
Fold the bottom of the tortilla upward and then roll each side in to make a wrap.
Pro tip: Want some extra flavor? Mix together your favorite spices or seasonings and sprinkle them on your ingredients. You won’t regret it.
